Meatloaf was built to stretch meat, and it still does. Seven ounces of beef and pork cost $2.04, 60% of the plate; breadcrumbs, onion, and egg add bulk and moisture for 19 cents. Every ounce of breadcrumb filler that replaces an ounce of beef saves most of the beef's 32 cents, which is why meatloaf recipes run from almost all meat to a third filler, and why the cheapest meatloaves are the ones that taste most of bread.

The sides are the other half of the plate, and they cost $1.07: mashed potatoes with their butter and milk 51 cents, green beans 36 cents, gravy 20 cents. A diner puts two sides and gravy beside the slices because they make a $15 plate look full for a fraction of the meat's cost per ounce. Per ounce the green beans cost twice what the potatoes do, so a second scoop of mash in place of the vegetable is the quiet way kitchens shave a plate.

Meatloaf's other strength is that it holds. It is baked in loaves well ahead of service, slices cleanly once rested, and reheats by the slice, so a loaf that does not sell at dinner becomes tomorrow's lunch special or meatloaf sandwich. That keeps waste low and the real food cost close to the 22.5% on the recipe, which many cooked-to-order plates cannot say.

Meatloaf Plate cost FAQ

How much does it cost to make meatloaf?
About $3.38 for a diner plate at foodservice prices: $2.04 of beef and pork, 19 cents of breadcrumbs, onion, and egg, an 8-cent ketchup glaze, and $1.07 of mashed potatoes, gravy, and green beans.
How much should a restaurant charge for a meatloaf dinner?
Around $15 for a meatloaf plate with two sides and gravy, a 22.5% food cost. Diners in lower- cost areas often sell it for less, and a meatloaf sandwich made from leftover slices is usually priced lower still.
Is meatloaf a cheap meal to make?
Cheaper than most meat entrees, because breadcrumbs, onion, and egg stretch the meat for a few cents an ounce. The meat is still 60% of the plate's cost.
Why use beef and pork in meatloaf?
Pork adds fat and tenderness, and at foodservice prices ground pork costs less per ounce than ground beef, 22 cents against 32 here. A blend of 5 oz beef to 2 oz pork makes a softer loaf for less than all-beef.
